Workshop Cancellation Disclaimer
In the event of bad weather, natural disasters, or other unforeseen circumstances, the workshop may be canceled or rescheduled. Participants will be notified as soon as possible, and an alternative date or a full refund will be offered.

Introduction
Kick off with a friendly welcome and meet our lecturer and staff. Learn about Miso and our mission before diving into the miso-making process.

Miso Making Session
Get hands-on with traditional miso making! You’ll mash soybeans, mix koji and salt, combine ingredients, pack your miso into a container, and seal it for fermentation.

Lunch Time
Enjoy a flavorful lunch featuring miso-based dishes, where you can relax and reflect on your experience.
Miso-based Lunch Set
After the workshop, enjoy a carefully curated miso-inspired lunch that celebrates the fusion of tradition and modern culinary practices. Dishes will incorporate different types of miso, giving you a taste of how versatile and impactful miso can be in a meal.
Miso-based Kids Menu is also available.

Allergies & Special Dietary Considerations
Ingredients Used:
Soybeans (alternative options like chickpeas or kidney beans available for participants with soybean allergies)
Koji (rice, barley, or brown rice varieties)
Salt.
If you have allergies to any of these ingredients, please inform us in advance. We are happy to accommodate alternative ingredients whenever possible, but participation with known allergens is at the attendee’s own risk.

Our Miso Craftsman
Meet Machiko Watanabe, the creator behind our miso-making workshops. She started in February 2021 after joining a friend’s online class, and was surprised by how delicious homemade miso could be. Wanting to create flavors she loved, she began experimenting with different beans, koji, and salts. Her passion for HUMPE MISO and its health benefits, like a stabilized body temperature of 36.5°C, kept her going. Machiko now dreams of sharing this joy by opening a restaurant featuring her miso dishes.
